NURS-112 Nutrition and Disease Prevention
This is a basic course in the study of nutrients, their functions, metabolism, food sources, and optimal choices for the promotion and maintenance of health. Discussions include nutritional needs throughout the life cycle, with special considerations during pregnancy, lactation, athletics and weight control. Students discuss the role of nutrition as an interdisciplinary approach to health care, disease prevention, and medical implications, as well as its application in community health, education, and government-sponsored food programs. Problem solving and critical thinking methodologies are included during group presentations of micronutrients emphasizing nutrient deficits and excesses. Students use computer-based diet analyses to periodically evaluate personal dietary intakes with a view to using acquired skills in conducing nutrition assessments.
